My Christmas Cranberry Roast Duck

Duck is often mistaken as a red meat, but true enough duck is a white meat. Duck and goose are birds of flight. Their meat is darker than chicken and turkey because they fly more and their muscles have more myoglobin, that gives their meat a darker colour. When I was working for Breeks Café, my boss wanted me to do a duck that looked like a Chinese style red roasted duck but with a western taste. I made it and it was a big sale item during that Christmas.
