Golden Fried Rice

I learnt this special Fried Rice at Chen Fu Ji Fried Rice Restaurant. It cost about $25 a plate with 200 gram of crab meat in that restaurant at the time. I do not use overnight & left-over rice because I feel that it is difficult to control the texture and taste. I use freshly cooked, piping hot rice from the rice cooker as it is easy and nice. Remember to only use freshly cooked rice for fried rice.
