Duo of Yam MOUSSE and Teochew “Orh Nee”

My Teochew mama called Orh Nee (yam paste) “Teochew Ice Cream” But this “ice cream” is not cold. The traditional yam paste is covered with a layer of hot syrup with oil. Today the yam paste is not too sweet and oily, and when it is served it will not burn your tongue. This is certainly more healthy!
