The humble noodle is a difficult ingredient to deal with. After you bought it from a supplier or the market you need to keep it to the chiller immediately. Bring the noodle out from the chiller for about 5-8 minutes to rest before cooking. If the boiling water is too hot you need to add in a ladder of cold water before throwing in your noodle. After blanching the noodles rinse your noodles in cold water to make sure the cooking process has stopped. If you follow my instructions you would certainly get your “QQ” noodle you desire.
