Good clay pot rice requires the use of a good, high-quality, Chinese bowl-shaped clay pot as this ensures the rice cooks evenly. Start cooking on high heat, then reduce to medium heat after the mixture comes to a boil. Do not remove the lid till your rice is cooked for about 30 minutes. When I was a small cook, I suggested to use my pottery to serve the clay pot rice, I was chased out of the kitchen. Today, many are asking me where to get this set of pottery.
